Ingredients: 2 eggs 1 1/2c flour 3 c milk 4T melted butter 2c seedless raisins 4 tsp BP 6c flour

Directions: Ingredients above make two loaves!

Directions for 1 loaf:

• Beat eggs • Add 3/4 c sugar, 1 1/2 c milk, 2 T melted butter, little sale, 1 c seedless raisins chopped or cut • Sift 2 t BP and 3 c flour, stirring raisins into mixture. • Pour into deep pan. • Bake for 1 hr, slow oven 275-300º •Rub Top of Loaf with butter & brown sugar

“Notes: Despite the title, it’s not quick. I cook at 300 and it takes over 1 hour. Because I make 2 loaves at once (an often forget to double something) the added note is the amounts for 2 loaves. I don’t chop the raisins, but I do soak them in water while I mix everything else and then drain before adding. Grease the pan, but don’t add flour. Rubbing butter on the top of the hot loaves adds a wonderful top crust (I skip the brown sugar on top)”
